Mastering how to live with home cooking in a balanced healthy way: what does it take?
In this retreat with Trine Hahnemann we will spend time understanding the holistic circle of taking care of ourselves with healthy eating, done by home cooking and the basics we need, understanding the seasons where we live. In beautiful surroundings, we will have workshops together around seasonal produce. What is season and how should we understand it in the times we live now?
We will visit producers, pick olives and spend time together emerging ourselves in understanding the world seen through food. And you can develop a healthier and conscious relationship with food; a good life is about good food and having time to cook and enjoying the eating.
Trine Hahnemann is a cook, food and cookbook writer, entrepreneur and founder of several companies working with farm-to-table ideas and sustainable solutions. Trine has created and owned a catering company touring with bands. A canteen company for 23 years feeding 3,000 to 4,000 people a day from several locations, she also ran the restaurants and canteen at the Danish parliament for 7 years. And she started Hahnemanns Køkken a 100% organic foodspace with a bakery, eatery and cooking school in 2018. Both companies are now sold, the canteen company in 2019 and Hahnemanns Køkken in 2023. Both located in Copenhagen.
Trine has written several cookbooks in her native Danish and 10 in English: The Scandinavian Cookbook (2008), The Nordic Diet (2009), Scandinavian Christmas (2012), Scandinavian Baking (2014), Scandinavian Comfort Food (2016), Open Sandwiches (2018) and Copenhagen Food and Stories (2018), which won the UK Guild of Food Writers award for BEST international cookbook 2019, and Scandinavian Green (2020) about her love of vegetables, all published by Quadrille. Her latest book is Simply Scandinavian from 2023, a book about the easy meals we should eat everyday with focus on vegetables. Her latest book is “Midnight Sun”, published in September 2026.
Trine has for the last 30 years worked with sustainable food solutions, organic produce, emphasis on vegetables, farm-to-table, diversity-and-storytelling, food cooked with love.

Participants will be picked up at Lisbon Airport Arrivals at 3:00 pm, followed by a bus transfer to Monsaraz. Guests travelling independently are welcome to arrive at the hotel from around 5:00 pm. A private and exclusive welcome dinner will be served at the hotel upon arrival, at 7:30 pm
Friday, 15 October 202
After breakfast, we’ll stroll to Sofia In Monsaraz (SIM) for a morning of garden, conversation, and culinary discovery. Our first session, “How to Make Great Salads,” invites everyone to create their own seasonal salad, followed by a relaxed lunch on the patio.
The afternoon continues with a second session before we set out to discover the region’s finest local flavours, from an artisan cheese producer to an Alentejo winery, where we’ll enjoy a private wine tasting.
Returning to the hotel around 6:30 pm, we’ll have time to unwind before heading to Monsaraz Castle for an intimate dinner within the historic village.
Saturday, 16 October 202
After breakfast, we’ll begin with a visit to a small local bakery near the hotel before strolling to SIM.
At SIM, we’ll experience a taste of the Alentejo harvest, gathering olives together from the trees before enjoying an olive oil tasting.
At lunch time, we’ll continue with “Plan to Eat Well,” followed by a relaxed lunch on the patio. We may even gather around the outdoor wood-fired oven to prepare something together. The afternoon will unfold with another session or workshop before returning to the hotel around 5:30 pm.
The evening is yours to enjoy at leisure. Alternatively, for those who wish to continue the experience, we can arrange an optional stargazing evening at the Monsaraz Observatory, with private transportation. This experience is not included in the retreat price
Sunday, 17 October 2027
After breakfast, we’ll stroll to SIM, where the morning begins with a peaceful yoga session at 9:30 am, outdoors whenever the weather allows.
We’ll then continue with a morning workshop exploring the art of eating well and living well: from planning your week and creating a well-stocked pantry to understanding seasonal salads, soups, and stews. We’ll explore how to enjoy a greater variety of vegetables, make the most of beans and lentils, reduce food waste, and reconnect with the traditions and pleasures that make food meaningful, including why there is always room for cake. After lunch, the studio will be yours from approximately 2:30–5:30 pm for a final cooking or workshop session.
We’ll return to the hotel around 6:00 pm, with time to unwind before gathering for our farewell dinner at a restaurant close to the hotel
Monday, 18 October 2027
After breakfast, you will depart at 9:00 am for your return journey to Lisbon Airport, with an estimated arrival at 12:30 pm. On the way, we will make a 30 to 45-minute stop at a charming local pottery shop.

We ensure that everything is well organised with attention to detail, so that nothing will prevent you from enjoying all the peace and quiet of the Alentejo.
Each participant is given their own room with air conditioning, full and private bathroom, shared or private balcony and outdoor access.
This accommodation is an enjoyable 15-minute walk from the workshop venue (SIM) and passes by the Bulhoa menhir (National Monument) and the Alentejo plain.
Note: The Single rooms will be staying in the “Studio Suit” and “T1 Suite”.

Internacional roundtrip airfare, alcoholic drinks, activities not included in the itinerary, hotel incidentals including room service, expenses during free time, laundry service and hotel bar, food and beverages not included in the itinerary. Partners are welcome with an extra fee of 500€.
We require all participants to have a personal travel insurance that at minimum covers medical emergencies and cancellations. We do not provide travel insurance for the retreat and each participant is required to have their own individual travel insurance. The place, where the retreat happens, has an Insurance that covers accidents. We will not be responsible for refunding any lost trip funds if you have to miss your scheduled trip.
We accommodate vegetarian, vegan, gluten free or dairy/egg free, and some allergies. We are unable to accommodate participants with severe food allergies or severe food intolerances. Please contact us in advance of registering if you have any dietary questions.
It will start when arriving at the hotel, Thursday evening and finish when you leave the hotel, by Monday morning. We are not responsible for any non-retreat activity that a participant decides to purchase outside of the retreat and such activity will not form part of the participant’s contract with us. The bus transport is covered by insurance.
This retreat includes a walking tour where the ground may be uneven. You may be on your feet for several hours at a time and should be comfortable with walking.
The material list will be communicated a few months before the event, and each student will bring their own. The materials can be shipped to our place before you arrive.

If you need to cancel your participation in a guaranteed retreat, the following cancellation terms apply:
If you are unable to attend, please notify us as soon as possible so we can process your cancellation and discuss any available alternatives.
Payment can be made by Bank transfer or PayPal in euros. Additional costs may apply where special accommodations are made available to participants.
In this event we will accept up to 15 people. The event does not include spouses, partners or friends if they are not taking the workshop. Please contact us if you would like to bring a non-participant partner.
If we cannot gather the minimum participants of 8, the event can be canceled and the payments refunded to the participants, less 20€ for cancelation costs.
